Quick Meal Prep Idea!

or many years I went through life eating whatever I wanted to.  That all changed after my bout with cancer.  I have since become a label reader at the grocery store and made  lifestyle changes with my diet among other things.  I wanted to share with you a photo from my birthday salad party. This year I decided to have a different kind of birthday party that encouraged my friends to be more healthy. In general we are starting to develop health issues and a lot of it can be improved by eating healthy. I know because I have done it and I am continuing this lifestyle of healthy eating. I decided to have a salad party where guests brought salad toppings and their own mason jars to prep salad for their week. I didn’t want gifts just friends celebrating another year of life so we can get healthy together and have more fun for years to come. It was all of our first time doing something like this and it was really fun. My Dr Destia spearheaded it all and she has done many of these. I hope to encourage all of you to eat better so you can feel better. 44 never felt so good!! Thank you to all that came. You made my day very special. Dr Destia. Lisa. Chrystal. Fatima. Tom. They also helped me put together my tower garden and plant seedlings to sprout. To me it symbolizes the growth of friendship too as I will be eating and staying well with the garden my friends helped me build.

These salads keep in the fridge for 10 days!  Here is the key:

  1. The very bottom of the jar is where you put the salad dressing so it doesn’t make the leafy stuff soggy.
  2. Second you put in the firm veggies like carrots, cabbage, some even like to put sweet peppers and olives in this part of the jar.
  3. Last but not least you in the lettuce and kale and you can top it with almond slices, cranberris, blue berries, granola, whever you like.Enjoy your salad in a jar!  Here’s to good health!
