Baked Pop Corn Chicken for the Big Game, or any time!
When we gather to watch sports I try to find healthier versions of our favorite snack food. This Baked Popcorn Chicken Recipe is easy and the kids love it year round!
Baked Popcorn Chicken
2 lb. skinless chicken breast, cut into 2-inch pieces
Freshly ground black pepper
extra-virgin olive oil
2 c. crushed corn flakes, sugar free
Olive oil spray
1/3 c. mayonaise
1/2 c. sour cream
1 tbsp. sriracha
1 tsp. cayenne
2 1/2 tbsp. green onions
Preheat oven to 375 degrees F.
Spread parchment paper on sheet pan.
Season chicken with salt and pepper.
Drizzle chicken with olive oil and dredge in crushed corn flakes.
Place chicken on sheet pan in a single layer and spray with oil.
Bake until the chicken is golden brown, about 10 to 12 minutes.
Meanwhile, in a small bowl combine mayonaise, sour cream, Sriracha and cayenne.
Serve popcorn chicken with sriracha dip and garnish with scallions.
