San Mateo Tommy Brady Lobstah Chowdah!!

Sees like everyone wants the Patriots to lose this weekend. I hope they win. Tommy Brady grew up in the bay area a 49ers fan. He will make history if he wins this weekend! I say Go Pats!! And let's have some Lobster Chowder for the game! You can always grab lobster meat at the New England Lobster Market & Eatery in Burlingame. Their Chowdah also rocks!
1/2 cup chopped bacon
2/3 cup unsalted butter
2 cups finely chopped onions
1 1/3 cups finely chopped celery
2 cups frozen corn
2 teaspoons chopped garlic
Salt and freshly ground black pepper
1 cup all-purpose flour
8 cups fish stock
1/3 teaspoon cayenne
1 pound Yukon gold potatoes, peeled and diced
2 cups heavy cream
3 cups chopped lobster meat from tails and claws
1/2 cup chopped green onions
In a very large pot, cook the bacon over medium heat. Remove with a slotted spoon and set aside.
Melt the butter over medium heat. Add the onions, celery, and saute until soft, about 4 minutes. Add the corn, garlic, salt, pepper, and cook, stirring, for 3 minutes. Add the flour and cook, stirring constantly, until the flour starts to brown about 3-4 minutes. Add the fish stock and cayenne, and stir well.
Bring to a boil. Reduce the heat to medium-low and simmer uncovered, stirring occasionally, for 15 minutes.
Add the potatoes, stir, and simmer until tender, about 10 minutes.
Add the cream, lobster and green onions, and cook, stirring, for 2 minutes.
Remove from the heat and ladle into bowls.
Sprinkle with bacon and serve.
